Payasam

Payasam is a delicious South Indian dessert recipe which will blow your mind away with its amazing flavors. It is called Kheer in various other parts of the country and is a must have for all those with a sweet tooth. As the name suggests, this dessert is prepared using Amaranth seeds which are highly packed with nutrients. They are rich in fiber and proteins and contain antioxidants which protect the body against harmful free radicals. They also help in lowering the cholesterol levels in the body. Other ingredients used in this payasam are full cream milk, jaggery (gud), pistachios, almonds, cashew nuts, raisins, and ghee. It is prepared using iron-rich jaggery instead of sugar. Step 1

To prepare this delicious dessert, take a pan and heat it over a low flame and add the amaranth seeds to it. Let them puff and then keep aside.

Step 2

Then, in a non- stick pan, heat the ghee and add almonds, cashew nut, pistachios, raisins in it and sauté them for around 2 minutes. In a separate pan, heat the full cream milk for 10 minutes.

Step 3

Once done, add the puffed amaranth seeds to the milk. Let them cook for some time and keep stirring till the milk achieves a thick consistency.Then, add jaggery into the milk and let it get mixed properly. Transfer the payasam to the serving bowls. Serve hot.
